Week 3 Review

Here we are at week 3 of thee Whole30 challenge + I finally feel like I have this clean eating under control! Most of the cravings have gone away – in terms of craving sweets or chips. I’ve also noticed I can go with fewer snacks throughout the day, which I never thought would be possible! As far as my goals from my week 1 recap go, I notice that my stomach is less irritated overall. My acne continues to fluctuate but I have noticed less inflammation + I am trying to avoid any additional treatments until after I am done with my Whole30 challenge.

Although some of the meals require some time to cook, I have enjoyed eating fresh + minimally processed foods. My wallet is also happier + in my final post next week I will dive into the food expense differences between my Whole30 challenge + the month prior. In both my week 1 + week 2 recap, I included all of the recipes for breakfast, lunch, + dinner. So below, I have included all of the new recipes we tried + my honest opinion of each meal!

Breakfast

Whole30 Breakfast Casserole by 40 Aprons – I chose to meal prep a breakfast casserole and it was SO tasty! This recipe yielded approximately 6-8 servings. I would recommend filling the casserole with as many vegetables as possible to add in some consistency with the casserole. I do not like mushrooms, so I opted for sweet potatoes instead.

Lunch

In case you didn’t see my week 1 or 2 recap, lunches are almost always leftovers from the previous night’s dinner. I try to plan it so that there are enough servings for my husband + I.

Dinner

Chipotle-Lime Shrimp Lettuce Wraps by The Defined Dish – this recipe was very simple + I chose to have this shrimp recipe on the day I went grocery shopping. I was able to have the shrimp steamed + seasoned with Old Bay Seasoning + just add the lettuce! I can’t speak on the recipe taste but this was the inspiration for the meal that night!

Turkey Taco Meatballs + Spaghetti Squash by The Defined Dish – these turkey meatballs were amazing! If you have been following along, we have some version of spaghetti + meatballs every week + I must say, I don’t really miss the original pasta version now!

Lemon + Dill Chicken + Scalloped Potatoes by The Defined Dish- Unfortunately, these recipes were not my favorite. The lemon + dill chicken had a taste I was not thrilled about (maybe a little too much dill?) + the scalloped potatoes were not crispy enough. I didn’t want to burn the food but it came out rather soupy.

Almond Crusted Salmon + Caesar Salad by The Defined Dish – this recipe was one we will definitely make again! The flavor was on point and I paired it with a Caesar salad using a Whole30 approved Caesar dressing.

Mini Meatloaves + Mashed Potatoes by The Defined Dish – while these mini meatloaves were easier to prepare, the larger meatloaf recipe from the week 1 recap was my favorite overall. These mashed potatoes are just as good as the real deal!

Chinese Orange Chicken + Broccoli by The Defined Dish – the Defined Dish is finding very creative ways to create meals that taste identical to the real thing! This one definitely did not disappoint except that I was only able to get 2 servings from the recipe instead of 4.

Steak Bites + Sweet Potatoes by The Modern Proper – this dish was a great ending to the week, although it did take a while to prepare. I would recommend trying this recipe on a grill for easier cooking!
